According to the National Foundation for Celiac Awareness over 3 million Americans have Celiac Disease. More commonly referred to as a gluten allergy, Celiac Disease affects one in every 141 Americans (or about 1% of the population) with an estimated 83% of those affected being either undiagnosed or misdiagnosed with other conditions!
